Peanut Butter Cereal Bars

Ingredients

  • 3 cups Lovebird Cereal Unsweetened O's*

  • 1 cup creamy peanut butter

  • 1/4 cup melted coconut oil

  • 1/3 cup honey

  • 2 tsp vanilla extract

  • 1 scoop collagen ( I use Lineage or Needed)

  • 1/4 cup pumpkin seeds (I use go raw sprouted pumpkin seeds)

  • 1/4 cup unsweetened shredded coconut

Instructions

Melt the peanut butter, coconut oil, and honey together (I like to do this over a double boiler). Stir in the collagen and vanilla extract until smooth. Fold in the cereal, then gently mix in the pumpkin seeds and shredded coconut until everything is evenly coated.

Transfer the mixture to a parchment-lined 9x9-inch baking dish or divide it into a muffin pan for individual bars. Freeze for at least 1 hour, or until firm.

Store in an airtight container in the freezer. I love eating these straight from the freezer! They aren't the best grab-and-go snack since they soften and get sticky fairly quickly at room temperature.

*I love using Lovebird's Unsweetened O's for this recipe, but any of their flavors work! I've also made these with the Cinnamon and Honey flavors and they're delicious—I just reduce the honey slightly since those cereals are already a little sweeter.
