Pumpkin Spiced Muffins (Sweetened with Dates)

Pumpkin spice season is in full swing and I wanted to make a festive muffin I could feel good about giving the boys! These pumpkin spice muffins are naturally sweetened with dates, made with simple ingredients, and really easy to throw together. Just blend the wet ingredients, mix with the dry, and bake!

Wet Ingredients

  • 1 cup pumpkin purée

  • 1 cup packed, pitted Medjool dates (about 16–20)

  • ¾ cup hot water

  • 1 tsp vanilla extract

  • 3 Vital Farm eggs

Dry Ingredients

  • 1½ cups almond flour

  • ½ cup cassava flour

  • 1½ tsp baking soda

  • 1 tbsp pumpkin pie spice

  • 1 tsp cinnamon

  • Pinch of salt

Optional: Sprinkle pepitas on top or mix in chopped nuts or chocolate chips.

Instructions

  1. Preheat the oven to 350°F and line a muffin pan with muffin liners. This recipe makes 12 full-sized muffins.

  2. Add the hot water and pitted dates to a small bowl. Cover and let soak for at least 10 minutes.

  3. Add the soaked dates and water, pumpkin purée, eggs, and vanilla extract to a blender. Blend until smooth, then set aside.

  4. In a large bowl, combine the almond flour, cassava flour, baking soda, pumpkin pie spice, cinnamon, and salt.

  5. Pour the wet mixture into the dry ingredients and stir until just combined. The batter will be a bit thick.

  6. Divide the batter evenly among the muffin liners. Add any optional toppings and bake for 35 minutes. Enjoy!
